Yoshi Soba is a very popular standing noodle restaurant operating in Tokyo. The sauce is made from honjozo soy sauce produced in Kuwana, Mie Prefecture, which has a tradition dating back to 1889 (no chemical seasonings, colorings, or sweeteners are used). This soy sauce is combined with bonito and Hidaka kelp broth to create a delicious, additive-free sauce with a natural, exquisite flavor. The vegetables used for tempura and other ingredients are carefully selected from all over Japan to ensure safety for our customers and, of course, taste. The noodles are made from our special buckwheat flour, which we have developed over many years of trial and error, and combined with the deliciousness of the dipping sauce, we offer our customers a cup of our specialties.
